
Asparagus 101

This year has been a fabulous year for asparagus, take advantage of this season's bumper crop.

During the spring, peak asparagus season look for white and purple varieties in addition to the typical green.
Fun fact: Did you know there are more than 300 species of asparagus grown today.
Asparagus is a nutrient-dense food that is high in folic acid and is also a good source of potassium, fiber, vitamin A, vitamin B6, and vitamin C, and thiamine. It also contains chromium, a trace mineral that enhances the ability of insulin to transport glucose from the bloodstream into cells, this helps keep our blood sugars under control.
Asparagus is also a natural diuretic due to its high levels of asparagine, an amino acid.
